1. Mini Ham and Cheese Quinoa Cups

Getting a protein packed snack in is a great way to start the morning.

These mini ham and cheese cups are gluten-free, packed with protein, and contain quinoa for an energy boost.

At only 47 calories per serving, these treats can be eaten on the way to the office or served to the kids before they head out the door.

They’re basically mini frittatas containing eggs, egg whites, cooked quinoa, shredded zucchini, cheddar cheese, and diced ham.

1. Simply combine all the ingredients in a bowl.

3. Add the cooked quinoa, and mix again.

4. Liberally spray a mini muffin tin with non-stick spray, fill the cups up with the mixture, and bake for about 20 minutes or until the cups are golden brown around the outside.

5. Done!
